“Fine dining” on the train

Passengers can fully enjoy a fine dining experience between Zurich and Paris with the “La Table” concept
Getting on the train and feeling completely relaxed. This is one of the reasons why passengers choose BUSINESS 1ÈRE class on TGV Lyria trains, where they have a dedicated steward for the 30 seats.

The onboard crew, trained with TGV Lyria’s values of Franco-Swiss know-how and excellence, are on hand to meet passengers’ needs throughout the trip. In order to start the journey in a refreshing way, a hot towel and a welcome drink are offered with a choice that includes a selection of champagne and wines from Switzerland and France. International newspapers are also available.

After that, the “fine dining” begins. With the LSG Group’s “La Table” concept, passengers can choose when to begin their meal service at their convenience and are served at their seat. Dishes are presented on high-quality porcelain plates and on a laid table.

The menu and its innovative recipes were developed by Mathieu Castex, Executive Chef at LSG Sky Chefs. The French chef, in love with good food, is happy that his creations are so well received by travelers. “The main courses most in demand are the Charolais Beef Goulash with soft polenta, broccoli florets, mushrooms and roasted cherry tomatoes,” said Philippe Dercy, Service Manager at LSG Helvetia S.A.S. “There is also the Filet Mignon of pork in a Dijon Mustard and Comté Sauce, mashed potatoes with chestnut shards, stir-fried forest mushrooms with caramelized shallots and fresh herbs.” Desserts and a selection of cheeses round off the dining experience.

During the journey from Zurich to Paris, passengers can enjoy their meal at their own pace. Of course, there is also an express service for those who prefer to work or rest. “Being able to offer and serve such a high-quality menu to the guests onboard makes us very proud as a service team,” added Dercy. “For the passengers, it is a very special experience because ‘fine dining’ is not many people’s idea of what you get on trains.”
